Garlic veggie chicken

Chicken breast or other cut. I am sure you could try other meat...
Loads of veggies - courgette, onion, tomatos, peppers, mushrooms, celery, aubergine, etc. (as much of whatever you want)
Pot of pesto sauce (plain, tomato or even aubergine variety. or make your own)
Spray of olive oil (not essential)

Chop veg and cut chicken into squares. Mix all ingredients together - use whole pot of pesto if there's 4 or more people - only half a pot if there's only two. Spray with a little olive oil if you wish. Salt and pepper. Put in the oven (Gas mark 6) and cook for about half an hour. Stir half way through and add some low fat mozzarella cheese if you want 5 mins before the end.

Serve with a little pasta, rice, new potatos, green veg or just on it's own. It's so easy to make and yummy and healthy.

Last time I did this, my husband said "you don't really need the chicken in this"... and for a confirmed carnivore, that was a little surprising! Shocked
