Vegtable soups

take a mixture of vegetables (i tend to buy a stew pack tomatoes and use any other vege around) make oneor two pints of stock (I use Oxo cubes for ease) cut up the vegtables and put into a saucepan and boil until hardest vegtables are done. Things like peppers and mushrooms can also be added.

Pea soup
slice up and fry a large onion make up a pint or two of stock add a bage of frozen peas or a kilo or of fresh ones and boil for 20 minutes to half an hour.

I always liqiudise vegtable and pea soup. Salt and pepper and worcster sauce can be added to taste

Onion soup
slice up 3-4 large onions and fry in a little olive oil, butter or margarine
ad 1-2 pints of vegetable stock and boil for at least 20 minutes. If you want thicker soup add a table spoon of flour or cornflour. Add salt peppe and/or worcster sauce to tatse.

All can be adapted according to taste
